L is for Love

We had a lovely Valentine's Day, and then continued the celebration of love through President's Day weekend.

On the evening of V-day, Rick had to teach his Cambodian class, and then we were slotted to participate in a Valentine's dance at a local nursing home, so we had a romantic Valentine's LUNCH instead of dinner! I converted our apartment into a fancy restaurant, and the meal turned out to be delicious!! (I will post the recipe in the comments section, if anyone is interested.)


So, our lunch was lovely, and so are my pearl earrings and necklace. Good job, Rick! That evening, Carson was the hit of the nursing home dance with his safety-pinned heart.

Rick also celebrated the holidays by finally getting over his nasty cold and his nice case of pinkeye. Pink was nice for Valentine's Day, but we sure are glad he's all better!!


On Monday, we continued our tradition of eating the amazingly delicious pancakes at Magleby's Fresh for breakfast. They are seriously amazing. We went there for our one year anniversary back in December, and we've been craving them ever since. We LOVE that the pancakes include free re-orders. You can see my 3 empty plates...



We also LOVE our nieces and nephews. For another celebration of Valentine's and President's Day, we went sledding with Alison and Wilson. Despite an intense fear of deer, the two little ones were very brave and fun sledding partners!




Carson LOVES his Bumbo chair from his aunt Jeanel. He can now sit up like a big boy and watch mom make dinner!

Finally, it is obvious that we LOVE taking videos of Carson. His new favorite activity is sucking on his hands. Rick and I have independently taken several videos of the hand sucking. I'll only share two of them. :)

Slow-Cooked Korean Beef Short Ribs

4 to 4.5 pounds beef short ribs (I used some pork and some steak. I even think it would be good with chicken.)
1/4 c. chopped green onions with tops
1/4 c. soy or tamari sauce
1/4 c. beef broth or water
1 T brown sugar
2 t minced fresh ginger
2 t minced garlic
1/2 t black pepper
2 t sesame oil
Hot cooked rice
toasted sesame seeds

Place meat in slow cooker. Combine green onions, soy sauce, broth, brown sugar, ginger, garlic and pepper in medium bowl; mix well and pour over meat. Cover; cook on low 7-8 hours or until meat is tender. (I cooked it on high for 3-4 hours for lack of time.)
Remove meat from cooking liquid; cook slightly. Trim excess fat. Cut meat into bite-size pieces, discarding bones and fat. Let cooking liquid stand 5 min. to allow fat to rise. Skim off fat.
Stir sesame oil into liquid. Return meat to slow cooker. Cover; cook 15-30 minutes or until hot. Serve with rice; garnish with sesame seeds.

Fun post! Carson is so cute with his hands, I love how entertained babies are with parts of their bodies. And I'd been waiting for a follow-up post from your Valentine's story to see if Rick came through or not, so thanks :)

We can't keep Avery's hands out of her mouth! She LOVES them. It is kind of nice because now when she spits out her binky she sucks her hands and that means minimal crying! Soon we will both have little babies with little teeth!

sorry to post his here, I can't find the post where you gave me your email address! sorry it's taken me so long to respond! I hope it isn't too late!
Right now may not be the best time to ask us about the air force because so far they've just paid for everything! we haven't had to give them a thing :) and we LOVE it. Kent will go to a 4 week officer training in June and then won't have to do anything else until his residency. The pro's heavily outweighed the cons for us and that's why we joined. Kent shadowed quite a few air force doctors and all of them said they'd do it again (even one said he didn't love but would still do it again because of the benefits). And as a word of warning, all information I tell you is somewhat second hand since we haven't been through it yet.
We are insanely afraid of debt, especially that much! It is HEAVEN to be here and not be worried about money at all. Everything is taken care of for us and I love it. I stress out just looking at the other students and their families struggle with their loans. We have no qualms about living all over the country/world. Since you two both served mission I am assuming it wouldn't be a nightmare for you either. If it's really that bad we can always exit after four years and be totally debt free. We love the fact that military residencies get great pay (doublish what civilians get paid) and that their hours truly are limited (about 20-30 fewer hrs per week then civilian). All of kent's malpractice/administrative fees are paid for and taken care of when he starts practicing. We chose air force because they are BY FAR the most family friendly of the branches. Negatively, Kent's options may be somewhat limited when it comes time for him to apply for residencies. Historically almost all MD(opposed to DO)recruits get their first or second pick, but there is the chance he won't. Army residents almost always get first pick and have AMAZING options. We didn't go with army because chances of going overseas without family are much higher and because Kent is somewhat flexible on what he wants to specialize in.

if you guys know that you want to do ortho surgery or some other in depth speciality, I wouldn't recommend military. You'd make enough money after residency to get out of debt relatively quickly.
right now they pay our tuition and all school fees (books, etc) and we get a monthly stipend of about 1300. There is a rumor floating that the stipend is going to raise by 2-300 dollars this fall.
kent loves structure and doesn't really mind not being in charge so that's another reason military wasn't so bad to us. many people feel stifled by the heirarchy and whatnot.
that's all that I can think of right now! I'll rack my brain and send any other info I have your way! Please let me know of any other questions you have! do you guys know where you are going yet? we LOVE being out East :) and Kent loves med school. I'm sure you'll be happy wherever you end up. good luck!!
